I enjoyed Lighter Side entrees such as the Tilapia with Mango Sauce (pan-seared tilapia in a Caribbean-inspired salsa made with mangos, red onions, and lime puree served next to a brown rice pilaf blended with edamame beans, pecans and currants) and the Stuffed Chicken with Portobello Sauce (boneless, skinless chicken breast stuffed with spinach and mushrooms accented with a smooth Portobello mushroom sauce made with mushrooms, white pepper and shallots, all served with roasted baby carrots and a delicious blend of julienne carrots, corn, and red peppers). They were delicious and didn’t taste like diet food at all! So they are a great option for a busy, new mom looking to shed the baby weight.
If mom is breastfeeding, opt for higher calorie foods such as the 700 calorie serving of filet mignon in a satiny Béarnaise sauce made with shallots, tarragon, onion, and garlic served with herbed new potatoes and a lentil-corn medley. Two of my favorites meals are the 520 calorie serving of grilled Atlantic salmon accented with a mild chili Hollandaise sauce, and served with Mexican-style rice, and green beans almondine and the 540 calorie serving of tender pork loin topped with a reduced apple cider sauce and accompanied by apple-pecan stuffing and a squash purée sweetened with real Vermont maple syrup.
Prices range from $9-$20 per serving. The Pork Loin in the Reduced Apple Cider Sauce I adored is just $10.50, but the Filet Mignon is a pricey $19.50. $19.50 sounds steep; however, this entree was comparable in taste to a meal at a fine restaurant. That makes it a good choice for a new mom who might not be able to eat out for a few months.
